With Aloo Paratha, Boondi Raita goes so well. Raita is yogurt condiment seasoned with herbs and spices. Minced vegetables, fruit, or Gram Flour smacks such as sev/bujia/crispy noodles or boondi are also added . I have added Boondi which is crunchy Gram Flour snack that is avaliable in ay Indian grogery store.
1 Cup Yogurt
1/4 Cup Boondi
1/4 Cup Finely Chopped Onion
2 Tbsp Fresh Finely Chopped Coriander
1/2 Tsp Ginger Juice
1/4 Tsp of Roasted Cumin Powder
Pinch or Two Chaat Masala
Red Chili Powder to taste
Salt to taste
- Wish Yogurt until it is smooth.
- To extract Ginger Juice, fine shred a small piece of Ginger, and squeeze shredded Ginger to collect Juice.
- Add Ginger Juice, Salt, Cumin Powder, Chaat Masala, and Red Chili Powder and mix. Do a Taste test and adjust seasoning if needed.
- Add Boondi, Onion, and Coriander. Mix everything together.
